Preparation Phase :

  • Before using dried zucchini, boil them in hot water for 15-20 minutes to soften them.
  • The boiled zucchinis are drained and left to cool. This process makes them suitable for stuffing.

Making Stuffed :

  • The filling is made with a mixture of minced meat, rice, onion, tomato, pepper paste, olive oil and various spices (such as black pepper, mint, cumin). For a vegetarian option, it can also be made with just rice and vegetables.
  • Fill the boiled zucchinis with the prepared mixture. Lightly cover the top of the zucchinis to prevent the filling from leaking out.
  • Place the stuffed vegetables in a pot and drizzle olive oil over them. Add water until half of the stuffed vegetables are covered and cook over low heat.

Service :

  • After cooking, the dolmas can be served hot or at room temperature. You can add flavor by pouring yogurt or squeezing lemon on top.
